I've usually been updating whenever I get a notification but there are also scripts out there that can do it automatically. The plex web interface will notify you of new versions, but I know some people dismiss the notification or ignore it. Also you may be missing out on some of the newer features (especially if you have plex pass) like the skip intro for TV shows. When I manually open Plex again, it boots up immediately as if nothing happened. The server "Plex" is installing an update Plex immediately quits, and the spinner says that the update is installing: I want to update Plex via the "Install Update" button within General settings:
